Explore new ways of enjoying Kauai-grown herbs and vegetables by way of traditional Persian cuisine. Kimya of Harmonious Roots will guide you through three different Persian frittata recipes, called kuku (kookoo), both baked and pan-fried. Kuku-ye sabzi (fresh herb kuku), kuku-ye kadu (zucchini kuku), and kuku-ye goleh kalam (cauliflower kuku), are versatile dishes that can be served as an appetizer, side dish or light main dish. You will experiment with the traditional Persian spices and ingredients used for kuku as well as locally available alternatives. In addition to savoring your kuku creations, a vegetarian, locally-sourced Persian dinner will be served.
